½ tsp salt

1 cup granulated sugar

Zest of 1 large lemon

1 tsp pure vanilla extract

1 large egg, at room temperature

2 tbsp freshly squeezed lemon juice

For the Blackberry Ice Cream:

2 cups fresh blackberries

¾ cup granulated sugar, divided

1 cup heavy cream

1 cup whole milk

1 tsp pure vanilla extract

Juice of ½ lemon

For Assembly:

Fresh mint leaves for garnish (optional)

Instructions
 

Make the Lemon Cookies:

    - Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.

      - In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set this dry mixture aside.

        - In a large mixing bowl, cream the softened unsalted butter and granulated sugar together using an electric mixer until the mixture is light and fluffy, about 2-3 minutes.

          - Beat in the lemon zest, pure vanilla extract, egg, and fresh lemon juice until all ingredients are fully incorporated and smooth.

            - Gradually add the flour mixture to the wet ingredients, mixing gently until just combined to avoid overmixing.

              - Using a tablespoon or a cookie scoop, drop rounded dough balls onto the prepared baking sheet, ensuring they are spaced about 2 inches apart for even baking.

                - Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are slightly golden brown. Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

                  Prepare the Blackberry Ice Cream:

                    - In a medium saucepan over medium heat, combine the fresh blackberries and ¼ cup of the granulated sugar. Cook while stirring occasionally until the blackberries start to break down and become syrupy, approximately 5-7 minutes. Remove from heat and strain the mixture through a fine-mesh sieve to separate the juice from the seeds, pressing down with a spatula to extract as much juice as possible. Allow the blackberry puree to cool completely.

                      - Meanwhile, in a separate bowl, whisk together the heavy cream, whole milk, the remaining ½ cup of granulated sugar, pure vanilla extract, and lemon juice until the sugar is fully dissolved.

                        - Fold in the cooled blackberry puree until well combined.

                          - Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until the ice cream reaches a soft-serve consistency. Transfer the churned ice cream into an airtight container and freeze for at least 4 hours, or until it is firm.

                            Assemble the Sandwiches:

                              - Once the cookies have cooled completely, and the blackberry ice cream is set, take one lemon cookie. Place a generous scoop of blackberry ice cream on the flat side of the cookie. Top with another cookie, flat side down, creating a delicious sandwich.

                                - Repeat this process with the remaining cookies and ice cream to create as many sandwiches as desired.
