Ingredients

For the Meatballs:

1 lb ground beef (or substitute with ground pork)

1/2 cup cooked jasmine rice

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1/4 cup soy sauce

2 tbsp sesame oil

1 tbsp brown sugar

1 tsp fresh ginger, grated

1/2 tsp freshly cracked black pepper

1/4 tsp red pepper flakes (adjust based on your heat preference)

1 egg, lightly beaten

Sesame seeds and additional chopped green onions for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tbsp gochujang (Korean chili paste)

1 tsp freshly squeezed lime juice

1 tsp honey

Pinch of salt to taste

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This ensures the meatballs will cook evenly and develop a nice golden color.

Create the Meatball Mixture: In a large mixing bowl, thoroughly combine the ground beef (or pork), cooked jasmine rice, chopped green onions, minced garlic, soy sauce, sesame oil, brown sugar, grated ginger, black pepper, red pepper flakes, and the lightly beaten egg. Use your hands for the best mixing results until the mixture is well blended.

Form the Meatballs: Using your hands, create meatballs about 1 inch in diameter. Arrange them on a baking tray lined with parchment paper, making sure to space them apart to allow for even cooking.

Bake the Meatballs: Transfer the baking tray to your preheated oven and bake for 18-20 minutes, or until the meatballs are fully cooked through and browned on the outside. You can check doneness with a meat thermometer; they should reach an internal temperature of 160°F (71°C).

Prepare the Spicy Mayo Dip: While the meatballs are baking, grab a small bowl and whisk together the mayonnaise, gochujang, lime juice, honey, and a pinch of salt until the mixture is smooth. Taste and adjust the spice level by adding more gochujang if you prefer a spicier dip.

Serve: Once the meatballs are finished baking, remove them from the oven and let them cool for a few minutes. Garnish the meatballs with sesame seeds and extra chopped green onions for an attractive finish. Arrange the meatballs on a serving platter alongside the spicy mayo dip for dipping.

Enjoy your delicious Korean BBQ Meatballs with a refreshing side of crispy vegetables or tangy pickled radish to enhance your meal!
