Ingredients

For the Meatballs:

1 lb ground beef (or ground chicken for a lighter alternative)

1/2 cup panko breadcrumbs (for extra crunch)

1/4 cup finely chopped onion

2 cloves garlic, minced

1/4 cup fresh parsley, finely chopped

1 large egg

2 tablespoons soy sauce

1 teaspoon fresh ginger, grated

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for a spicy kick)

For the Teriyaki Sauce:

1/2 cup soy sauce

1/4 cup packed brown sugar

1/4 cup pineapple juice (freshly squeezed is best)

1 teaspoon sesame oil

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

1/2 teaspoon garlic powder

1/2 teaspoon ginger powder

1 tablespoon rice vinegar

Fresh pineapple chunks (for garnish)

Sesame seeds (for garnish)

Chopped green onions (for garnish)

Instructions

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef or chicken, panko breadcrumbs, finely chopped onion, minced garlic, chopped parsley, egg, soy sauce, grated ginger, salt, black pepper, and red pepper flakes. Use your hands to mix the ingredients together until just combined, ensuring not to overmix the meat to maintain tenderness.

Shape the Meatballs: Preheat your oven to 400°F (200°C). With clean hands, shape the meat mixture into meatballs, roughly 1 inch in diameter. Place the formed meatballs on a baking sheet lined with parchment paper, ensuring they are spaced apart for even cooking.

Bake the Meatballs: Transfer the baking sheet to the preheated oven and bake the meatballs for about 15-20 minutes, or until they are golden brown and cooked through, achieving an internal temperature of 165°F (74°C).

Prepare the Teriyaki Sauce: While the meatballs are baking, prepare the teriyaki sauce. In a medium saucepan, whisk together the soy sauce, brown sugar, pineapple juice, sesame oil, garlic powder, ginger powder, and rice vinegar. Heat the mixture over medium heat until it starts to simmer.

Thicken the Sauce: Once the sauce reaches a simmer, slowly add the cornstarch-water mixture, stirring continuously. Continue to cook for an additional 2-3 minutes until the sauce thickens to your desired consistency. Remove from heat and set aside.

Combine Meatballs with Sauce: Once the meatballs are done baking, carefully remove them from the oven. Transfer the meatballs into the saucepan with the teriyaki sauce. Gently toss the meatballs until they are evenly coated in the sauce.

Serve and Garnish: Serve the juicy pineapple teriyaki meatballs hot, garnished with fresh pineapple chunks, a sprinkle of sesame seeds, and chopped green onions for a burst of color and flavor. These meatballs can be enjoyed on their own, over a bed of rice, or as a delicious appetizer.
