1 pound Italian sausage (choose between sweet or spicy)

1 cup cooked rice (white or brown)

1 small onion, finely diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for extra heat)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) so it is ready for baking.

    Prepare the Peppers: Carefully cut off the tops of the bell peppers and remove all seeds and membranes inside. Season the insides lightly with salt and pepper. Place the peppers upright in a baking dish, making sure they stand securely.

      Cook the Sausage: In a large skillet over medium heat, add the Italian sausage. Use a spatula to break the sausage into crumbles while cooking. Continue cooking until the sausage is browned and no longer pink in the center, about 5-7 minutes. If there is excess fat, drain it off.

        Sauté the Vegetables: In the same skillet, add the diced onion and sauté for about 3-4 minutes, or until it becomes translucent and soft. Add the minced garlic and cook for an additional minute until it releases a fragrant aroma.

          Combine Ingredients: To the skillet, add the cooked rice, drained diced tomatoes, oregano, basil, and red pepper flakes (if you like it spicy).
