3 celery stalks, diced

6 cups chicken broth (low-sodium recommended)

4 cups fresh spinach, roughly chopped

1 can (14 oz) diced tomatoes, with their juices

1 tsp dried oregano

1 tsp dried basil

½ tsp red pepper flakes (optional, for added heat)

Salt and pepper to taste

1 cup small pasta (such as ditalini or orzo)

2 tbsp olive oil

Freshly grated Parmesan cheese, for serving

Cook the Sausage: In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Once the oil is shimmering, crumble the Italian sausage into the pot. Cook, stirring occasionally, until the sausage is browned and no longer pink, about 5-7 minutes. Once cooked, remove the sausage from the pot and set it aside on a plate, leaving the flavorful drippings in the pot.

    Sauté Vegetables: In the same pot, add the remaining tablespoon of olive oil. Introduce the diced onion, sliced carrots, and diced celery.
