2 lbs beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

4 medium carrots, peeled and sliced into rounds

3 celery stalks, trimmed and chopped

4 medium Yukon Gold potatoes, peeled and diced into cubes

1 cup green beans, trimmed and cut into 1-inch pieces

1 cup peas (fresh or frozen)

4 cups beef broth

1 tablespoon tomato paste

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sautéing the Beef: Begin by selecting the ‘Sauté’ function on your Instant Pot. Add the olive oil and heat it until shimmering. Season the beef cubes with a pinch of salt and pepper, then add them to the pot. Sear the beef for about 4-5 minutes, turning occasionally, until all sides are nicely browned. Once browned, transfer the beef to a plate and set aside.

    Cooking the Aromatics: Keep the pot on the ‘Sauté’ mode and add the chopped onion and minced garlic. Sauté for about 2-3 minutes, stirring frequently, until the onion is translucent and the garlic is fragrant.

      Combining Ingredients: Stir the tomato paste into the onion and garlic mixture, allowing it to cook for approximately 1 minute to deepen the flavor. Return the browned beef to the pot, then add the sliced carrots, chopped celery, diced potatoes, and green beans.

        Adding Liquids and Seasoning: Pour in the beef broth, then add Worcestershire sauce, dried thyme, dried rosemary, and bay leaves. Stir the mixture thoroughly to ensure everything is evenly combined.

          Pressure Cooking: Secure the Instant Pot lid and set the steam valve to the sealing position. Select ‘Pressure Cook’ or ‘Manual’ mode and adjust the timer to 35 minutes.

            Natural Release: After the cooking time ends, allow the pressure to naturally release for 10-15 minutes. Then, carefully switch the valve to venting to release any remaining pressure.

              Finishing Touches: Once the lid is safely removed, gently stir in the peas. Taste the stew and adjust the seasoning with additional salt and pepper, if desired. Allow the stew to sit for a few minutes to let the flavors meld together and cool slightly.
