4 salmon fillets (approximately 6 oz each)

1/4 cup honey

2 tablespoons low-sodium soy sauce

1 tablespoon Dijon mustard

2 cloves garlic, finely minced

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

4 cups fresh broccoli florets

1 tablespoon sesame seeds (optional, for garnish)

2 green onions, thinly sliced (optional, for garnish)

Instructions
 

Prepare the Marinade: In a small mixing bowl, combine the honey, soy sauce, Dijon mustard, minced garlic, olive oil, a pinch of salt, and freshly ground black pepper. Whisk these ingredients together until they are fully incorporated and smooth.

    Marinate the Salmon: Transfer the salmon fillets to a shallow dish or a resealable plastic bag. Pour the marinade over the salmon, ensuring every fillet is generously coated. Cover the dish or seal the bag tightly, and let it marinate in the refrigerator for a minimum of 30 minutes, or up to 2 hours to enhance the flavor.

      Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for baking the salmon.

        Prepare the Broccoli: While the salmon marinates, bring a large pot of water to a boil. Once boiling, add the broccoli florets and blanch them for about 2-3 minutes, or until they are vibrant green and slightly tender. Immediately drain the broccoli and transfer it to a bowl of ice water to halt the cooking process. Once cooled, drain the broccoli again and set it aside.

          Bake the Salmon: Line a baking sheet with parchment paper or lightly grease it to prevent sticking. Carefully remove the salmon fillets from the marinade and arrange them skin-side down on the prepared baking sheet. Reserve the marinade for later. Bake the salmon in the preheated oven for approximately 12-15 minutes, or until the fish flakes easily when tested with a fork.

            Sauté the Broccoli: While the salmon is baking, heat a drizzle of olive oil in a skillet over medium heat. Add the blanched broccoli to the skillet and sauté for 3-4 minutes, seasoning with salt and black pepper to taste. For an extra burst of flavor, toss in any remaining marinade from the salmon and cook for an additional minute.

              Glaze and Serve: In the last 2 minutes of the baking time, switch your oven to broil. Brush the salmon fillets with some of the reserved marinade to create a beautiful, sticky glaze. After broiling, remove the salmon from the oven.

                Garnish and Plate: Serve the warm salmon fillets on plates alongside the sautéed broccoli. For an extra touch, garnish with sesame seeds and sliced green onions as desired.
