Homestyle Beef and Vegetable Stir-Fry

Ingredients
  

1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 bell pepper (any color), sliced into thin strips

1 large carrot, julienned

1 cup snap peas, trimmed and washed

1 small yellow onion, thinly sliced

3 cloves garlic, minced

1-inch piece of ginger, grated

3 green onions, chopped (for garnish)

2 tablespoons oyster sauce

1 tablespoon sesame oil

Cooked rice, for serving

Instructions
 

Marinate the Beef: In a medium mixing bowl, combine the sliced flank steak with the soy sauce and cornstarch. Use your hands or a spoon to mix thoroughly until each piece of beef is well coated. Let the mixture marinate for at least 15 minutes to enhance the flavor while you prep the vegetables.

    Prepare the Vegetables: Rinse the bell pepper, carrot, snap peas, and onion under cold water. Slice the bell pepper into thin strips, julienne the carrot, trim and wash the snap peas, and thinly slice the onion as listed in the ingredients.

      Heat the Pan: In a large skillet or wok, pour in 1 tablespoon of vegetable oil and heat over medium-high heat until it shimmers, indicating it’s ready for cooking.

        Cook the Beef: Carefully add the marinated beef to the skillet in a single layer. Sear it undisturbed for about 2-3 minutes until it develops a nice brown crust. After that, stir-fry for an additional 2-3 minutes until the beef is fully cooked. Once done, remove the beef from the skillet and set aside on a plate.

          Stir-Fry the Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onions, minced garlic, and grated ginger. Sauté for about 1 minute, stirring continuously until the mixture is aromatic and the onions begin to soften.

            Add Other Veggies: Toss in the sliced bell pepper, julienned carrot, and trimmed snap peas to the skillet. Stir-fry for about 4-5 minutes, cooking until the vegetables are tender yet still crisp.

              Combine Beef and Sauce: Return the cooked beef to the skillet along with the oyster sauce and sesame oil. Stir everything together to ensure the beef and vegetables are evenly coated with the sauce. Heat through for about 1-2 minutes, allowing the flavors to meld.

                Garnish and Serve: Before serving, sprinkle the chopped green onions over the stir-fry for a pop of color. Serve the savory beef and vegetable stir-fry over a generous bed of warm cooked rice.
