1 red bell pepper, diced

1 cup fresh spinach, roughly chopped

1 tsp smoked paprika

½ tsp ground cumin

½ tsp sea salt

¼ tsp freshly ground black pepper

2 tbsp extra virgin olive oil

2 large eggs (optional, for serving)

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the diced sweet potatoes, seasoning them with salt, black pepper, and ¼ teaspoon of smoked paprika.
