4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup cream cheese, softened at room temperature

1/4 cup sun-dried tomatoes, finely chopped (optional)

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and black pepper, to taste

2 tablespoons olive oil, divided

Juice of 1 fresh lemon

1/4 cup grated Parmesan cheese (for topping)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This ensures that it's hot and ready for baking once you finish preparing the chicken.

    Prepare the Filling: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until it's aromatic. Next, stir in the chopped spinach and cook for approximately 3-4 minutes, until the spinach has wilted and reduced in volume. Remove the skillet from the heat and allow the mixture to cool for a few minutes.

      Mix the Cheese Filling: In a large mixing bowl, combine the sautéed spinach and garlic mixture with the crumbled feta cheese, softened cream cheese, chopped sun-dried tomatoes (if using), dried oregano, dried basil, and a generous pinch of salt and pepper. Blend all ingredients together until the mixture is well combined and creamy.
