Ingredients

1 pound ground turkey

1 tablespoon olive oil

1 large onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

2 medium carrots, diced

2 celery stalks, diced

1 can (15 oz) white beans (cannellini or Great Northern), drained and rinsed

1 can (14 oz) diced tomatoes with green chilies

2 cups chicken broth

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon salt (to taste)

¼ teaspoon black pepper (to taste)

1 cup corn (frozen or canned)

1 tablespoon lime juice

Fresh cilantro (for garnish)

Sour cream and shredded cheese (optional, for serving)

Instructions

Heat the Oil: In a large pot or Dutch oven, pour the olive oil and place it over medium heat until shimmering.

Sauté the Vegetables: Add the diced onion, bell pepper, carrots, and celery to the pot. Cook, stirring frequently, for about 5-7 minutes until the vegetables are softened and the onion turns translucent.

Add Garlic and Turkey: Incorporate the minced garlic, stirring it in for about a minute until fragrant. Then, add the ground turkey to the pot. Use a spatula to break it up, cooking for 5-7 minutes until the turkey is thoroughly browned and cooked through.

Spice It Up: Sprinkle in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir well to ensure the spices coat the turkey and vegetables, cooking for an additional 1-2 minutes to deepen the flavors.

Combine Ingredients: Pour in the diced tomatoes with their juices, followed by the chicken broth and white beans. Stir everything together until evenly combined.

Simmer: Increase the heat to bring the chili to a gentle boil. Once bubbling, reduce the heat to low, cover, and let it simmer for about 30-40 minutes, stirring occasionally. If the chili thickens too much, add extra broth or water to achieve your desired consistency.

Add Corn and Finish: Within the last 10 minutes of cooking, add the corn and lime juice to brighten the dish. Taste and adjust the seasoning if needed.

Serve Garnished: Ladle the chili into bowls and top with fresh cilantro for a burst of color. Optionally, add a dollop of sour cream and a sprinkle of shredded cheese to each bowl for extra creaminess and flavor.
