2 carrots, peeled and diced

2 celery stalks, diced

3 cloves garlic, minced

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 tablespoons tomato paste

2 tablespoons soy sauce (or tamari for gluten-free)

Salt and pepper, to taste

2 tablespoons olive oil

For the Mashed Potato Topping:

4 large potatoes, peeled and chopped into even chunks

1/2 cup plant-based milk (such as almond or oat milk)

1/4 cup vegan butter

Salt and pepper, to taste

1/4 teaspoon garlic powder (optional for extra flavor)

Instructions
 

Prepare the Lentils:

    - In a large pot, combine the rinsed lentils with the vegetable broth. Bring the mixture to a rolling boil. Once boiling, lower the heat and let it simmer uncovered for about 20-25 minutes, or until the lentils are tender. If there's any excess liquid, drain it off.

      Cook the Vegetables:
