1 cup green or brown lentils, rinsed and drained

1 medium onion, finely chopped

2 cloves garlic, minced

2 large carrots, diced

2 celery stalks, diced

1 medium zucchini, diced

1 bell pepper (red or yellow), chopped

1 can (14 oz) diced tomatoes, with their juices

4 cups vegetable broth

2 cups fresh spinach or kale, roughly chopped

2 teaspoons ground cumin

1 teaspoon smoked paprika

½ teaspoon dried thyme

½ teaspoon dried oregano

Salt and black pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped, for garnish (optional)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the chopped onion. Sauté for about 5 minutes, stirring occasionally, until the onion becomes translucent. Then add the minced garlic and cook for an additional 1-2 minutes, or until it releases its fragrance.

    Add the Vegetables: Incorporate the diced carrots, celery, zucchini, and bell pepper into the pot. Continue to sauté the vegetable mixture for an additional 5-7 minutes, or until the veggies start to soften, stirring occasionally to prevent sticking.
