1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced into rounds

2 celery stalks, sliced

4 cups low-sodium chicken broth

2 cups water

1 pound boneless, skinless chicken breasts

2 teaspoons dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and freshly cracked black pepper, to taste

4 ounces egg noodles (or your favorite pasta)

2 large eggs

1 tablespoon fresh lemon juice

Fresh parsley, chopped, for garnishing

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion. Sauté for about 3-4 minutes until the onion becomes translucent and softened. Next, stir in the minced garlic, sliced carrots, and sliced celery. Continue to cook for an additional 5 minutes, allowing the vegetables to soften and develop flavour.

    Add Liquid and Chicken: Pour in the chicken broth and water, followed by the chicken breasts, dried thyme, dried rosemary, and the bay leaf. Season with a pinch of salt and freshly cracked black pepper. Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer for about 20 minutes, or until the chicken is cooked all the way through.

      Cook the Noodles: While the chicken simmers, prepare the egg noodles in a separate pot according to the package instructions. Once al dente, drain the noodles and set aside.

        Make the Egg Ribbons: In a small bowl, beat the eggs and mix in the fresh lemon juice. Slowly drizzle the beaten egg into the simmering soup while stirring gently with a spoon or whisk. This technique will create beautiful, silky ribbons of egg throughout the soup.
