Ingredients

1 lb ground beef

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 can (14 oz) diced tomatoes with green chilies

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1 cup beef broth

Optional toppings: sour cream, shredded cheese, chopped green onions, fresh cilantro

Instructions

Heat the Oil: In a large pot or Dutch oven, warm the olive oil over medium heat. Add the diced onions and bell pepper, sautéing them for about 3-4 minutes until they soften and become fragrant.

Brown the Beef: Incorporate the ground beef into the pot. Cook the beef, stirring occasionally, for approximately 5-7 minutes, or until it's browned and fully cooked. Be sure to break the meat into small pieces for even cooking.

Add Garlic and Spices: Stir in the minced garlic along with the chili powder, cumin, smoked paprika, salt, and black pepper. Cook for an additional minute, allowing the spices to release their robust aromas.

Incorporate the Beans: Add the diced tomatoes with their juices, followed by the rinsed kidney and black beans. Stir everything together until well combined.

Add the Broth: Gradually pour in the beef broth. Slightly increase the heat and bring the mixture to a gentle simmer.

Simmer: Allow the chili to simmer uncovered for about 10 minutes, stirring occasionally. This will help the flavors meld and the chili to thicken. If you'd like a thicker consistency, continue to simmer for a few extra minutes.

Taste and Adjust: Once the chili has thickened, taste it and adjust the seasonings as desired. If you crave more heat, consider adding a pinch of cayenne pepper or some chopped jalapeños for an extra kick.

Serve: Ladle the chili into bowls and adorn with your choice of toppings – a dollop of sour cream, a sprinkle of shredded cheese, some chopped green onions, and fresh cilantro make delightful additions.
