Ingredients

2 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking powder

1 tablespoon olive oil

3/4 cup warm water (approximately 110°F or 43°C)

1 cup roasted Hatch green chilies, chopped (or 1 can if fresh is unavailable)

1 cup shredded mozzarella cheese (or your cheese of choice)

1/2 cup crumbled feta cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon ground cumin

Fresh cilantro, chopped (for garnish)

Sliced radishes (for garnish, optional)

Lime wedges (for serving)

Instructions

Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, salt, and baking powder. Create a well in the center of the dry ingredients. Gradually pour in the olive oil and warm water, stirring with a spoon or your hands until the mixture begins to form a cohesive dough.

Knead the Dough: Transfer the dough onto a floured surface. Knead the dough for about 5 minutes until it becomes smooth and elastic. Wrap the dough tightly in plastic wrap and let it rest at room temperature for 30 minutes to allow the gluten to relax.

Preheat the Oven: While the dough is resting, preheat your oven to 450°F (232°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Roll Out the Dough: Once the dough has rested, divide it into four equal sections. Using a rolling pin, flatten each portion into a circle about 1/4 inch thick. Ensure they are evenly sized for consistent baking.

Add Toppings: Lay the rolled flatbreads onto the prepared baking sheet. Evenly sprinkle the garlic powder, onion powder, and ground cumin over the surface of each flatbread. Top each one generously with the chopped Hatch chilies, followed by the shredded mozzarella, and finish with the crumbled feta cheese.

Bake: Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the flatbreads are golden brown and the cheese is melted and bubbly.

Garnish: Once baked, remove the flatbreads from the oven. Sprinkle with freshly chopped cilantro and, if desired, add some sliced radishes for an extra crunch and color.

Serve: Cut the flatbreads into wedges and serve warm, accompanied by lime wedges for an added burst of freshness.
