1 cup roasted Hatch green chiles, finely chopped

1 cup shredded Monterey Jack cheese

1/2 teaspoon ground cumin

Salt and freshly ground black pepper to taste

12 small corn tortillas

1/4 cup vegetable oil for frying

Fresh cilantro, chopped, for garnish

Prepare the Filling: In a large mixing bowl, thoroughly combine the cooked, shredded chicken, chopped Hatch green chiles, shredded Monterey Jack cheese, softened cream cheese, garlic powder, onion powder, ground cumin, and a sprinkle of salt and pepper. Mix until all ingredients are evenly incorporated.

    Soften the Tortillas: To make the tortillas easier to roll, warm them slightly. You can do this by placing them in a skillet over low heat for about 15-20 seconds on each side, just until they become pliable. Alternatively, wrap the tortillas in a damp paper towel and microwave for about 30 seconds.

      Assemble the Taquito Rolls: Lay one tortilla on a clean surface. Scoop about 2-3 tablespoons of the filling mixture onto one edge of the tortilla. Roll it tightly, ensuring the filling is securely wrapped inside. Set the rolled taquito seam side down on a plate. Repeat with the remaining tortillas and filling until all are assembled.

        Fry the Taquitos: In a large skillet, heat the vegetable oil over medium heat until shimmering. Carefully place a few taquito rolls seam side down into the hot oil, ensuring not to overcrowd the pan.
