Ingredients

6 large eggs

1/2 cup milk (or your preferred milk alternative, such as almond or oat milk)

1 cup cooked ham, diced into small pieces

1 cup fresh spinach, finely chopped

1/2 cup shredded cheese (use cheddar, mozzarella, or a delightful blend)

1/4 teaspoon freshly ground black pepper

1/4 teaspoon sea salt

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Cooking oil or non-stick spray, for greasing the muffin tin

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it’s ready for baking.

Prepare the Muffin Tin: Generously grease a standard muffin tin with cooking oil or apply non-stick spray evenly to prevent the muffins from sticking.

Whisk the Eggs: In a large mixing bowl, crack the eggs and pour in the milk. Whisk together until the mixture is smooth and well combined, creating a luscious base for your muffins.

Season the Mixture: Add the freshly ground black pepper, sea salt, garlic powder, and onion powder to the egg mixture. Stir thoroughly to ensure that the seasonings are evenly incorporated.

Combine Ingredients: Gently fold in the diced ham, finely chopped spinach, and shredded cheese. Use a spatula to mix until all ingredients are uniformly distributed throughout the egg mixture.

Fill the Muffin Tin: Carefully pour the egg mixture into the prepared muffin tin, filling each cup about three-quarters full to allow room for rising during baking.

Bake: Place the muffin tin on the middle rack of the preheated oven. Bake for 20-25 minutes, or until the edges turn golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: After baking, remove the muffin tin from the oven and let it cool for about 5 minutes. Then, gently transfer the muffins to a wire rack to cool completely. Serve warm as a hearty breakfast or snack, or store any leftovers in an airtight container in the fridge for up to 4 days.

Prep Time: 10 minutes | Total Time: 35 minutes | Servings: 12 muffins
