Grilled Zucchini Salad

3 medium zucchinis, sliced into 1/4-inch rounds

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/4 cup extra virgin olive oil, divided

2 tablespoons balsamic vinegar

1 teaspoon dried oregano

Salt and freshly ground pepper, to taste

1/4 cup feta cheese, crumbled

Fresh basil leaves, for garnish

Prep the Grill and Zucchini: Begin by preheating your grill or grill pan to medium-high heat. In a large bowl, combine the zucchini slices with half of the olive oil, season generously with salt and freshly ground pepper, and toss until the slices are well-coated.

    Grill the Zucchini: Arrange the zucchini rounds in a single layer on the preheated grill. Grill them for approximately 3-4 minutes on each side, or until you achieve nice grill marks and the zucchini is tender yet still slightly crisp. Once cooked, remove the zucchini from the grill and set aside.

      Grill the Bell Pepper and Onion: In the same grill pan, add the diced red bell pepper and the thinly sliced red onion. Drizzle with the remaining olive oil and sprinkle with dried oregano, salt, and pepper. Grill the veggies for about 5-6 minutes, stirring occasionally, until they are nicely charred and tender.

        Combine the Ingredients: In a large mixing bowl, combine the grilled zucchini, bell pepper, red onion, and halved cherry tomatoes. Drizzle the balsamic vinegar over the salad and gently toss to ensure all ingredients are evenly coated.
