2 large flatbreads or pita breads

1 medium zucchini, sliced into thin rounds

1 red bell pepper, cut into strips

1 yellow bell pepper, cut into strips

1 small red onion, sliced into rings

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup mozzarella cheese, shredded

Fresh basil leaves, for garnish

Balsamic glaze, for drizzling

Prepare the Vegetables: In a large mixing bowl, combine the sliced zucchini, red and yellow bell peppers, red onion rings, and halved cherry tomatoes. Drizzle the 2 tablespoons of olive oil over the vegetables, then sprinkle with the Italian seasoning, along with salt and pepper to taste. Use your hands or a spatula to toss the vegetables until each piece is evenly coated with the oil and seasonings.

    Grill the Vegetables: Preheat your grill to medium-high heat. Transfer the marinated vegetable mixture into a grill basket or arrange them directly on the grill grates. Grill the vegetables for approximately 8-10 minutes, turning them occasionally for even cooking, until they become tender and you can see caramelized grill marks.
