Ingredients

For the Shrimp Marinade:

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

Juice of 2 limes

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and freshly ground black pepper, to taste

Fresh cilantro, chopped (for garnish)

For the Tacos:

8 small corn tortillas

1 cup red cabbage, finely shredded

1 ripe avocado, sliced

1/2 cup crumbled queso fresco

1/4 cup fresh cilantro leaves

Lime wedges (for serving)

Salsa or hot sauce (optional)

Instructions

Marinate the Shrimp: In a medium mixing bowl, combine the olive oil, lime juice, minced garlic, cumin, smoked paprika, chili powder, salt, and pepper. Stir until well blended. Add the peeled and deveined shrimp to the bowl, tossing to ensure each shrimp is evenly coated with the marinade. Cover the bowl and refrigerate for at least 15 to 30 minutes to allow the flavors to meld.

Preheat the Grill: Prepare your grill by preheating it to medium-high heat. If you are using a grill pan on the stovetop, also heat it over medium-high.

Grill the Shrimp: Once the grill is hot, thread the marinated shrimp onto skewers (if you’re using wooden skewers, be sure to soak them in water for at least 30 minutes prior to grilling to prevent burning). Place the skewers on the grill and cook the shrimp for about 2 to 3 minutes on each side, or until they are fully cooked and have beautiful grill marks. The shrimp should turn pink and opaque.

Warm the Tortillas: While the shrimp are grilling, take the corn tortillas and wrap them in aluminum foil. Place them on the grill alongside the shrimp for about 2 to 3 minutes, just until warmed through and pliable.

Assemble the Tacos: To create the tacos, lay a few grilled shrimp onto each warmed tortilla. Top generously with the shredded red cabbage, fresh avocado slices, crumbled queso fresco, and a sprinkle of fresh cilantro leaves.

Serve: Present the tacos with lime wedges on the side for squeezing over the top. Offer salsa or hot sauce on the side for those who enjoy a little extra kick.

                - Presentation Tips: For an appealing touch, serve the tacos on a rustic wooden board or bright platter, garnished with extra cilantro and lime wedges, creating a vibrant and inviting display.
