Ingredients
  

1 pound Italian sausages (choose your favorite: sweet, spicy, or turkey)

1 medium zucchini, sliced into half-moons

1 medium yellow squash, sliced into half-moons

1 red bell pepper, cut into bite-sized pieces

1 yellow bell pepper, cut into bite-sized pieces

1 cup grape or cherry tomatoes, halved

3 tablespoons olive oil

2 teaspoons garlic powder

2 teaspoons Italian seasoning

Salt and pepper, to taste

Fresh basil or parsley for garnish (optional)

Aluminum foil, enough for 4 packs (approximately 12x18 inches each)

Preheat the Grill: Begin by preheating your grill to a medium-high heat, aiming for a temperature between 375°F and 400°F.

    Prepare the Vegetables: In a spacious mixing bowl, combine the sliced zucchini, yellow squash, red and yellow bell peppers, and halved grape or cherry tomatoes. Drizzle the mixture with olive oil, then sprinkle in the garlic powder, Italian seasoning, and a generous pinch of salt and pepper. Toss everything together until the vegetables are well coated with the seasoning.

      Prepare the Sausages: Depending on your preference, you can grill the Italian sausages whole for a juicier bite or slice them into bite-sized pieces for more flavor absorption and quicker cooking.

        Create the Foil Packs: Tear off four large sheets of aluminum foil (roughly 12x18 inches each). In the center of each sheet, place an equal portion of the seasoned vegetable mixture. Distribute the sausages evenly over the top of the veggies.

          Seal the Packs: Fold the aluminum foil over the vegetables and sausages to create a tight seal. Ensure there’s a bit of space in each packet for steam to circulate, while making sure they are securely closed to keep the delicious juices inside.

            Grill the Packs: Position the foil packs on the preheated grill. Close the lid and allow them to grill for about 20-25 minutes, turning the packs halfway through cooking. Check that the sausages are fully cooked and the vegetables are tender.

              Serve and Enjoy: Once cooked, carefully open each foil pack (be cautious of the hot steam) and consider garnishing with fresh basil or parsley for a burst of color and freshness. You can serve directly from the foil packs or transfer the contents to plates for a more refined presentation.
