Ingredients

4 large Portobello mushrooms, cleaned with stems removed

1/4 cup balsamic vinegar

2 tablespoons extra virgin olive oil

2 cloves garlic, finely minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Sea salt and freshly ground black pepper to taste

4 whole grain burger buns

4 slices of fresh mozzarella cheese

1 cup baby spinach leaves, washed

1 ripe avocado, sliced into thin wedges

1 large tomato, sliced into rounds

Optional: mayonnaise or aioli for spreading

Instructions

Marinate the Mushrooms: In a shallow bowl, whisk together the balsamic vinegar, olive oil, minced garlic, oregano, thyme, sea salt, and freshly ground black pepper. Submerge the Portobello mushrooms in the marinade, ensuring they are thoroughly coated. Cover and marinate in the refrigerator for a minimum of 30 minutes, or up to 2 hours for deeper flavor absorption.

Preheat the Grill: Preheat your grill or grill pan to medium-high heat. If using a charcoal grill, wait until the coals are fully ignited and have a light ash coating before starting.

Grill the Mushrooms: Remove the mushrooms from the marinade, allowing excess liquid to drip off. Position them on the grill, gill side down. Grill for about 5-7 minutes. Carefully flip the mushrooms over, placing a slice of mozzarella cheese on each cap. Continue grilling for another 5-7 minutes until the cheese is melted and the mushrooms are tender but still firm.

Toast the Buns: While the mushrooms are grilling, slice the whole grain burger buns in half and place them on the grill, cut side down. Toast them for 1-2 minutes until they are golden brown and slightly crispy.

Assemble the Burgers: On the bottom half of each toasted bun, spread a generous layer of mayonnaise or aioli, if desired. Top each with a grilled Portobello mushroom cap with melted cheese, followed by a handful of baby spinach leaves, a few slices of avocado, and tomato rounds. Gently place the top half of the bun to complete the burger.

Serve: Serve your hearty grilled Portobello mushroom burgers immediately, savoring the delightful warm flavors and textures!
