4 whole wheat pita breads

1 cup marinara sauce or your favorite pizza sauce

1 ½ cups shredded mozzarella cheese

1 cup assorted bell peppers, sliced (red, yellow, and green for color)

1 cup cherry tomatoes, halved

½ cup black olives, sliced

¼ cup red onion, finely sliced

1 teaspoon dried oregano

1 teaspoon garlic powder

½ teaspoon crushed red pepper flakes (optional for heat)

Fresh basil leaves, for garnish

Olive oil, for brushing

Salt and pepper, to taste

Instructions
 

Prepare the Grill: Start by preheating your grill to a medium-high heat (approximately 375°F/190°C). If using a charcoal grill, wait until the coals are glowing and covered with a fine layer of ash before beginning.

    Prepare Pita Base: Use a brush to lightly coat one side of each pita bread with olive oil. This will enhance the crispiness of the crust and help prevent the pita from sticking while grilling.

      Grill the Pita: Place the pita breads oil-side down directly on the grill grate. Close the lid and grill for about 2-3 minutes, or until you see nice grill marks and the pita starts to crisp up. While grilling, lightly brush the top side of the pitas with a bit more olive oil for added flavor.

        Add Sauce and Toppings: Once the pitas are grilled, carefully flip them over. Generously spread marinara sauce over each pita. Evenly distribute the shredded mozzarella cheese across the pitas, followed by piles of sliced bell peppers, halved cherry tomatoes, black olives, and red onion. Finish with a sprinkle of dried oregano, garlic powder, and season with salt and pepper. If you like a kick of heat, add crushed red pepper flakes.
