1 ripe pineapple, peeled, cored, and sliced into rings

1 can (15 oz) black beans, rinsed and drained

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

8 small corn tortillas

1 ripe avocado, sliced

1 cup red cabbage, finely shredded

1/2 cup fresh cilantro, roughly chopped

1 lime, cut into wedges

Optional: Crumbled feta cheese or cotija cheese for topping

Grill the Pineapple: Begin by preheating your grill to medium-high heat. Once hot, place the pineapple rings directly on the grill.
