Ingredients

2 ripe peaches, halved and pitted

1 tablespoon olive oil

Salt, to taste

Freshly ground black pepper, to taste

4 slices of artisanal bread (such as sourdough or ciabatta)

1 ball of burrata cheese (approximately 8 oz)

Fresh basil leaves, for garnish

Balsamic glaze, for drizzling

Optional: A sprinkle of red pepper flakes or a drizzle of honey for added flavor

Instructions

Prepare the Peaches: Begin by preheating your grill or grill pan to medium-high heat. Carefully brush the cut sides of the peach halves with olive oil, ensuring they are well-coated. Season them lightly with salt and freshly ground black pepper to enhance their natural sweetness.

Grill the Peaches: Once your grill is hot, place the peaches, cut-side down, onto the grill. Grill them for about 3-4 minutes, or until you see nice grill marks and the peaches have softened. Remove them from the grill and let them cool slightly before handling.

Toast the Bread: While the peaches are grilling, place the artisanal bread slices onto the grill or in a toaster. Grill for about 2-3 minutes per side, or until they are beautifully golden and have a slightly crisp texture.

Assemble the Toast: On each slice of warm grilled bread, place a generous portion of burrata cheese while it's still warm, allowing it to become slightly melty. For a rustic presentation, gently tear the burrata apart with your fingers.

Add Grilled Peaches: Slice the grilled peaches into wedges and artfully arrange them over the burrata. You can fan the slices out for a beautiful presentation or layer them, depending on your style preference.

Garnish: Top your toasts with fresh basil leaves for a burst of flavor and color. Drizzle generously with balsamic glaze for a touch of sweetness and acidity. If you desire a little heat, sprinkle a few red pepper flakes on top, or if you prefer a contrast to the savory elements, add a light drizzle of honey.

Serve Immediately: Serve your grilled peach burrata toasts right away while the bread is warm and the burrata is creamy and delightful!
