250g halloumi cheese, sliced into 1 cm thick slices

3 cups watermelon, cubed (seedless preferred)

2 cups arugula or mixed salad greens

1/4 cup fresh mint leaves, roughly chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

Salt and pepper to taste

Lemon zest, for garnish (optional)

Toasted pine nuts, for garnish (optional)
