Grilled Halloumi and Veggie Skewers

250g Halloumi cheese, cut into 1-inch cubes

1 medium zucchini, sliced into thick rounds

1 bell pepper (choose red, yellow, or green), cut into 1-inch squares

1 red onion, cut into wedges

1 cup cherry tomatoes

2 tablespoons olive oil

1 tablespoon balsamic vinegar

2 teaspoons dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley or basil, for garnish

Optional: Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes prior to grilling)

Prepare the Marinade: In a medium bowl, combine the olive oil, balsamic vinegar, dried oregano, garlic powder, salt, and pepper. Whisk together until well blended. This flavorful marinade will enhance both the halloumi and vegetables.

    Marinate the Vegetables: In a large mixing bowl, add the zucchini, bell pepper, red onion, and cherry tomatoes. Drizzle half of the marinade over the veggies, then toss gently to ensure everything is well coated. Allow the vegetables to marinate for about 15-20 minutes to absorb the flavors.

      Prepare the Halloumi: In a separate bowl, place the cubes of halloumi cheese. Pour the remaining marinade over the cheese and gently toss to coat. Let the halloumi sit and marinate alongside the veggies for the same 15-20 minutes.
