Grilled Corn Salad with Feta & Basil

4 ears of fresh corn, husked

1 red bell pepper, finely diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 cup feta cheese, crumbled

1/4 cup fresh basil leaves, chopped (plus extra for garnish)

3 tablespoons extra-virgin olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Salt and freshly ground black pepper, to taste

Preheat the Grill: Start by preheating your outdoor grill to medium-high heat, ensuring it’s hot enough for even cooking.

    Grill the Corn: Once the grill is hot, place the husked corn directly onto the grill grate. Grill for approximately 10-12 minutes, turning the corn occasionally, until it develops a slight char and becomes tender. After grilling, remove the corn and allow it to cool enough to handle.

      Prepare the Dressing: In a small mixing bowl, combine the extra-virgin olive oil, balsamic vinegar, honey, and a pinch of salt and black pepper. Whisk together until well blended and creamy. Set this dressing aside.

        Chop the Vegetables: While the corn is cooling, take this time to finely dice the red bell pepper, halve the cherry tomatoes, and finely chop the red onion.

          Cut the Corn: Once the corn has cooled, stand an ear of corn upright in a large mixing bowl and carefully cut the kernels off the cob with a sharp knife, letting them fall into the bowl. Repeat for all ears of corn.

            Combine Ingredients: To the bowl with the corn kernels, add the diced red bell pepper, halved cherry tomatoes, chopped red onion, crumbled feta cheese, and chopped basil leaves.

              Dress the Salad: Drizzle the prepared dressing over the salad ingredients. With a gentle hand, toss everything together until all components are evenly coated in the dressing.
