4 slices of rustic bread (sourdough or ciabatta are ideal)

1 cup fresh corn kernels (approx. 2 ears of corn)

1 cup creamy ricotta cheese

2 tablespoons extra-virgin olive oil, divided

2 tablespoons fresh basil, finely chopped

1 tablespoon freshly squeezed lemon juice

Zest of 1 lemon

Salt and freshly ground black pepper to taste

Optional: Red pepper flakes for a spicy kick

Prepare the Corn: Begin by preheating your grill or grill pan to medium-high heat. If using fresh corn, first husk the ears and remove any silk. Lightly coat the corn with a drizzle of olive oil and season with salt. Grill the corn for about 8-10 minutes, rotating it occasionally until it achieves a light char and is tender. Once cooked, remove from the heat and allow it to cool slightly before carefully cutting the kernels off the cob. Set the kernels aside.

    Make the Ricotta Spread: In a mixing bowl, combine the ricotta cheese with 1 tablespoon of olive oil, finely chopped basil, lemon juice, lemon zest, and a generous pinch of salt and black pepper. Stir the mixture until it is well combined and creamy. Taste for seasoning and adjust if needed.

      Toast the Bread: Brush each slice of rustic bread on both sides with the remaining tablespoon of olive oil. Place the slices on your grill and toast for approximately 2-3 minutes per side, or until they are golden brown and have nice grill marks.
