1/2 teaspoon freshly ground black pepper

1/4 teaspoon cayenne pepper (optional for a spicy kick)

For the Tacos:

8 small corn tortillas

1 cup ripe pineapple, diced into small cubes

1/2 red onion, finely chopped

1/2 cup fresh cilantro, roughly chopped

1 ripe avocado, sliced into thin wedges

Lime wedges for serving

Your favorite hot sauce (optional)

Instructions

Marinate the Chicken:

    - In a medium bowl, combine the olive oil, lime juice, minced garlic, ground cumin, smoked paprika, chili powder, sea salt, black pepper, and optional cayenne pepper. Whisk together until well blended.

      - Add the chicken thighs to the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes and up to 2 hours to enhance the flavor.

        Preheat the Grill:

          - Preheat your grill to medium-high heat, aiming for a temperature of about 400°F (200°C).

            Grill the Chicken:

              - Once marinated, take the chicken out of the marinade, allowing any excess to drip off.

                - Place the chicken on the hot grill and cook for approximately 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and grill marks appear.

                  - After grilling, remove the chicken from the grill and let it rest for 5 minutes before slicing it into thin strips.

                    Warm the Tortillas:

                      - While the chicken is resting, place the corn tortillas on the grill. Heat each tortilla for about 30 seconds on each side until they become soft and pliable.

                        Assemble the Tacos:

                          - On each warm tortilla, layer a few strips of grilled chicken. Top generously with diced pineapple, chopped red onion, and fresh cilantro.

                            - Add a slice of avocado and a drizzle of lime juice over the top. If you enjoy a bit of heat, finish with a few dashes of hot sauce!

                              Serve:

                                - Serve the tacos warm, accompanied by additional lime wedges for squeezing over and enhancing the flavors.
