12 oz (340g) penne pasta

2 tablespoons extra virgin olive oil

1 medium onion, finely chopped

2 cloves fresh garlic, minced

1 large red bell pepper, diced

1 medium zucchini, diced

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon crushed red pepper flakes (optional for heat)

Salt and freshly ground black pepper, to taste

1 cup fresh spinach leaves

8 oz (225g) feta cheese, crumbled

1 cup ricotta cheese

1/2 cup freshly grated Parmesan cheese

1/2 cup pitted kalamata olives, halved

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Set your oven to preheat at 375°F (190°C) to ensure it reaches the right temperature for baking.

    Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the penne pasta and cook according to package instructions until just al dente, about 9-11 minutes. Drain the pasta well and set aside.

      Sauté the Vegetables: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing for about 2-3 minutes until the onions are translucent. Introduce the diced red bell pepper and zucchini to the skillet, stirring occasionally for an additional 5 minutes until the vegetables have softened.

        Incorporate Tomatoes and Spices: Mix in the halved cherry tomatoes, dried oregano, dried basil, and crushed red pepper flakes (if using). Season with salt and pepper to taste. Continue to cook for another 2 minutes. Finally, stir in the fresh spinach leaves, cooking just until they are wilted and vibrant.

          Combine Pasta and Cheese: In a large mixing bowl, gently combine the cooked penne pasta with the sautéed vegetable mixture. Add in the crumbled feta and ricotta cheeses, folding everything together until well-blended.

            Layer and Prepare for Baking: Pour the pasta and vegetable mixture into a greased 9x13 inch (23x33 cm) baking dish, spreading it out evenly. Sprinkle the top with grated Parmesan cheese and scatter the halved kalamata olives over the surface.

              Bake: Cover the baking dish with aluminum foil to retain moisture and bake in the preheated oven for 25 minutes. After this time, carefully remove the foil and bake for another 10-15 minutes, or until the top is golden brown and the edges are bubbling.
