For the Tzatziki Sauce:

1 cup Greek yogurt

1 cucumber, grated and moisture squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

Salt and pepper, to taste

For the Bowls:

2 cups cooked quinoa or rice (your choice)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, thinly sliced

1 cup feta cheese, crumbled

1/2 cup Kalamata olives, pitted and sliced

Fresh parsley or dill, for garnish

Add the chicken thighs, ensuring they are well-coated with the mixture.
