1 medium butternut squash, peeled, seeded, and cut into 1/2-inch cubes

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 teaspoon ground cinnamon

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 sheet of store-bought puff pastry, thawed

4 ounces goat cheese, crumbled

1/4 cup grated Parmesan cheese

1 egg, beaten (for egg wash)

Fresh thyme sprigs, for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Roast the Butternut Squash: On a large baking sheet, combine the butternut squash cubes with olive oil, salt, black pepper, ground cinnamon, and fresh thyme. Make sure to toss the squash until it is evenly coated. Spread the cubes out in a single layer and roast in the preheated oven for 25-30 minutes, or until they are fork-tender and have developed a slightly caramelized exterior. Once done, remove from the oven and allow to cool slightly.

      Prepare the Puff Pastry: While the squash is roasting, lightly flour a clean surface and roll out the thawed puff pastry into a rectangle about 1/8-inch thick. Cut the pastry into rounds (approximately 6-8 inches in diameter) or squares, depending on your desired shape.

        Assemble the Galettes: Arrange the puff pastry pieces on a baking sheet lined with parchment paper. In the center of each piece, leaving a 1-inch border, sprinkle crumbled goat cheese and grated Parmesan. Evenly distribute the roasted butternut squash on top of the cheese.
