Lemon Glaze:

1 cup powdered sugar

2-3 tablespoons fresh lemon juice

Zest of ½ lemon (about 1 teaspoon)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 12-cup muffin pan by lining it with paper liners or giving it a light coating of non-stick spray.

    Mix Dry Ingredients: In a medium-sized mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and poppy seeds until well combined. Set this bowl aside for later.

      Cream Butter and Sugar: In a large mixing bowl, using a hand mixer or stand mixer, cream the softened butter and granulated sugar together on medium speed until the mixture becomes light and fluffy, which should take about 2-3 minutes.
