1 lb (450g) baby carrots (or 3 medium regular carrots, peeled and cut into sticks)

3 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, finely chopped)

1 teaspoon sea salt

½ teaspoon freshly cracked black pepper

½ cup freshly grated Parmesan cheese

Fresh parsley, finely chopped (for garnish)

Instructions
 

Preheat the Oven:

    Start by preheating your oven to 425°F (220°C). For easier cleanup, line a baking sheet with parchment paper to prevent sticking.

      Prepare the Carrots:

        If you choose regular carrots, peel them first, then slice them into sticks about 1/2 inch thick. For baby carrots, you can use them whole, just trim the ends if necessary.

          Season the Carrots:

            In a large mixing bowl, whisk together the olive oil, minced garlic, dried thyme, sea salt, and black pepper until well blended. Add the prepared carrots to the bowl and toss thoroughly until each piece is richly coated in the flavorful oil and spices.

              Arrange on Baking Sheet:

                Transfer the seasoned carrots onto the lined baking sheet, spreading them out in a single layer. Ensure that the carrots are not crowded to allow for even roasting.

                  Roast the Carrots:

                    Place the baking sheet in the preheated oven and roast the carrots for approximately 20-25 minutes. About halfway through the cooking time, give the carrots a gentle stir to promote even caramelization, until they are tender and have developed a golden-brown color.

                      Add Parmesan:

                        After roasting for 20-25 minutes, take the carrots out of the oven. Evenly sprinkle the grated Parmesan cheese over them. Return the baking sheet to the oven for an additional 5 minutes, or until the cheese has melted and started to bubble.

                          Garnish and Serve:
