Ingredients

1 lb (450g) large shrimp, peeled and deveined

3 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

1 lemon, zested and juiced (about 2 tablespoons juice)

1 teaspoon smoked paprika

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

¼ teaspoon red pepper flakes (optional, for a spicy kick)

Fresh parsley, finely chopped (for garnish)

Wooden or metal skewers (if using wooden, soak in water for 15 minutes prior)

Instructions

Prepare the Marinade: In a medium mixing bowl, combine the olive oil, minced garlic, lemon zest, and lemon juice. Add the smoked paprika, sea salt, black pepper, and red pepper flakes (if using). Whisk together until the mixture is well blended and aromatic.

Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for 15-30 minutes to allow the flavors to penetrate the shrimp.

Preheat the Grill: Set your grill to medium-high heat, approximately 375°F (190°C). If using wooden skewers, make sure to soak them in water for at least 15 minutes to prevent charring during grilling.

Skewer the Shrimp: Thread the marinated shrimp onto the skewers, leaving a small gap between each shrimp to ensure even cooking. For added flavor and vibrant color, you can alternate the shrimp with lemon wedges or halved cherry tomatoes while skewering.

Grill the Skewers: Once the grill is hot, place the skewers on it. Grill the shrimp for about 2-3 minutes on each side, or until they turn a beautiful pink color and are opaque throughout. Keep a close eye on them to avoid overcooking, as shrimp can become tough if left on the grill too long.

Garnish and Serve: Carefully remove the skewers from the grill and arrange them on a serving platter. Generously sprinkle with freshly chopped parsley, and serve immediately accompanied by extra lemon wedges for a zesty finish.
