4 tilapia fillets (fresh or frozen)

4 tablespoons unsalted butter

4 cloves garlic, minced

8 cups fresh spinach (or more, to taste)

1 teaspoon lemon zest

1 tablespoon lemon juice

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

Salt and pepper, to taste

1 tablespoon olive oil

1 tablespoon chopped fresh parsley (for garnish)

Preparation: If you're using frozen tilapia fillets, allow them to thaw properly. You can do this by leaving them in the refrigerator overnight or, if you're short on time, placing them in a sealed plastic bag and submerging in cold water for about 30 minutes until defrosted.

    Cooking the Spinach: In a large skillet, add the olive oil and heat it over medium heat. Once the oil is hot, add the minced garlic and sauté for approximately 1 minute until it becomes fragrant but not browned. Gradually add the fresh spinach to the skillet, stirring frequently until the leaves wilt, which should take about 2-3 minutes. Season this mixture with salt, pepper, lemon zest, and lemon juice for a burst of flavor. Once the spinach is fully wilted, remove it from the skillet and set it aside.

      Cooking the Tilapia: In the same skillet, reduce the heat slightly and add the butter, allowing it to melt completely. While the butter melts, season both sides of the tilapia fillets with salt, pepper, and thyme for an even coating of flavor. Carefully place the seasoned fillets into the skillet with the melted butter. Cook the fillets for 3-4 minutes on one side until crispy and golden. Carefully flip the fillets and continue cooking for another 3-4 minutes, or until the fish is opaque and flakes easily when tested with a fork.

        Combine: Once the tilapia is fully cooked, return the sautéed spinach to the skillet. Gently toss the spinach with the tilapia for about a minute, allowing the flavors to meld together and ensuring everything is reheated.
