Ingredients

For the Steak Bites:

1 lb sirloin steak, cut into bite-sized cubes

3 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and pepper, to taste

1 tablespoon olive oil

Optional: a pinch of red pepper flakes for a spicy kick

For the Potatoes:

1 lb baby potatoes, halved (or quartered if they are large)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika (for extra depth of flavor)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Potatoes:

    - Preheat your oven to 425°F (220°C).

      - In a large mixing bowl, combine the halved baby potatoes with 2 tablespoons of olive oil, 1 teaspoon of garlic powder, 1 teaspoon of smoked paprika, and salt and pepper. Toss until all the potatoes are evenly coated.

        - Spread the seasoned potatoes out in a single layer on a baking sheet lined with parchment paper.

          - Bake in the preheated oven for 25-30 minutes, flipping them halfway through, until they are golden and crispy on the outside.

            Sear the Steak Bites:

              - While the potatoes are baking, dry the steak cubes thoroughly with paper towels and season them generously with salt and pepper.

                - In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.

                  - Once the oil is shimmering, add the steak bites in a single layer, ensuring not to overcrowd the skillet; you may need to work in batches.

                    - Sear the steak bites for about 2-3 minutes without moving them, allowing for a nice crust to form. Flip the steak pieces and cook for another 2 minutes for medium-rare, adjusting the cooking time based on your preferred level of doneness.

                      Add Garlic Butter:

                        - Lower the heat to medium. Push the steak bites to one side of the skillet. On the other side, add the butter, minced garlic, thyme, rosemary, and optional red pepper flakes.

                          - Allow the garlic to sauté for about 30 seconds until it’s fragrant but not browned, then stir everything together to coat the steak bites in the garlic butter. Continue cooking for an additional minute to infuse all the flavors.

                            Combine and Serve:

                              - Once the potatoes are crisp and golden, remove them from the oven and carefully add them to the skillet with the steak bites. Gently toss everything together to combine, allowing the potatoes to soak up some of the flavorful garlic butter.

                                - Finish your dish with a sprinkle of freshly chopped parsley for a burst of color and freshness.

                                  Enjoy:

                                    - Serve the dish warm, allowing guests to savor the delicious garlic butter steak bites paired with the crispy potatoes. Consider serving with a side salad or fresh vegetables for a well-rounded meal.
