Ingredients

1 pound (450g) medium carrots, peeled and cut into fry shapes

4 tablespoons unsalted butter, melted

4 large cloves garlic, minced

1 tablespoon fresh parsley, finely chopped (plus extra for garnish)

1 teaspoon smoked paprika

½ teaspoon sea salt

½ teaspoon freshly ground black pepper

Optional: 1 tablespoon grated Parmesan cheese for an indulgent twist

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). This high heat is essential for achieving perfectly crispy carrot fries.

Prepare the Carrots: In a large mixing bowl, add the cut carrot fries. Drizzle the melted butter over the carrots and toss until they are thoroughly coated in butter.

Add Flavors: Incorporate the minced garlic, chopped parsley, smoked paprika, sea salt, and black pepper into the carrot mixture. If using Parmesan cheese, fold that in as well. Ensure all carrot fries are evenly covered in the flavorful buttery mixture.

Arrange on Baking Sheet: Line a large baking sheet with parchment paper, then spread the carrot fries in a single layer, leaving space between each fry to promote even roasting.

Roast the Carrot Fries: Place the baking sheet in your preheated oven and roast for 20-25 minutes. At the halfway mark, carefully remove the baking sheet and use a spatula to flip the fries to ensure they brown evenly.

Check for Doneness: The carrot fries are ready when they are tender on the inside and boast a golden brown and crispy exterior. For an extra crispy finish, you can broil them for an additional 2-3 minutes, but keep a close eye to prevent burning.

Serve and Garnish: Once done, take the fries out of the oven and allow them to cool slightly. Sprinkle with more chopped parsley for garnish, if desired. Serve the carrot fries warm alongside your favorite dipping sauce or enjoy them as a delicious snack on their own!
