1 pound (450g) of large portobello mushrooms, cleaned with stems removed

1/2 cup (115g) unsalted butter

4 cloves of garlic, minced

2 tablespoons fresh parsley, finely chopped

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon sea salt

1/2 teaspoon freshly cracked black pepper

2 tablespoons balsamic vinegar

1 teaspoon fresh lemon juice

Prepare the Garlic Butter Mixture: In a small saucepan, melt the unsalted butter over low heat. Once fully melted, add the minced garlic and sauté for about 2 minutes until fragrant. Be cautious not to let the garlic burn, as it can become bitter.

    Incorporate Fresh Herbs: Remove the melted butter from heat and stir in the finely chopped parsley, fresh thyme, sea salt, black pepper, balsamic vinegar, and lemon juice. Mix thoroughly and allow the butter mixture to cool slightly.

      Marinate the Mushrooms: In a large mixing bowl, arrange the cleaned portobello mushrooms. Pour approximately three-quarters of the garlic butter mixture over them, making sure to coat each mushroom generously. Cover the bowl and let them marinate at room temperature for at least 15 minutes, allowing the flavors to infuse.

        Preheat the Grill: While the mushrooms marinate, preheat your grill to medium-high heat (around 400°F or 200°C) to ensure a perfect char.

          Grill the Mushrooms: Once the grill is hot, arrange the marinated mushrooms gill side down on the grates. Grill for about 5-6 minutes, then carefully flip each mushroom over and brush with the remaining garlic butter mixture. Continue grilling for an additional 4-5 minutes, or until they are tender and have developed a nice char.

            Serve the Mushrooms: Once grilled to perfection, remove the mushrooms from the grill and let them rest for a minute. For serving, slice the mushrooms if desired, and drizzle any leftover garlic butter over the top for an extra burst of flavor.

              Optional Garnish: Elevate the presentation by sprinkling additional fresh parsley on top or adding a dash of red pepper flakes for a bit of heat before serving.
