Ingredients

1 pound fresh green beans, trimmed

4 tablespoons unsalted butter

3 cloves garlic, minced

1/2 cup sliced almonds

1 tablespoon fresh lemon juice

Zest of 1 lemon

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Green Beans: In a large pot, bring a generous amount of salted water to a rolling boil. Carefully add the trimmed green beans and blanch them for 3-4 minutes, or until they are vibrant green and tender-crisp. Once done, drain the beans and plunge them immediately into an ice bath (a bowl filled with cold water and ice) to halt the cooking process. After a few minutes, drain again and set the beans aside.

Toast the Almonds: Heat a large skillet over medium heat. Add the sliced almonds to the skillet and toast them, stirring frequently, for about 3-5 minutes, or until they turn golden brown and release a nutty aroma. Keep a close eye to prevent burning. Once toasted, remove the almonds from the skillet and set them aside.

Make the Garlic Butter: In the same skillet where you toasted the almonds, add the unsalted butter and melt it over medium heat. When the butter is fully melted, add the minced garlic. Cook for about 1 minute, stirring continuously to ensure the garlic doesn’t burn and infuses the butter with its flavor.

Combine Ingredients: Add the blanched green beans to the skillet with the garlic butter. Sauté the beans for 2-3 minutes, tossing them well to ensure each bean is evenly coated with the buttery garlic mixture.

Season and Finish: Remove the skillet from the heat and gently mix in the toasted almonds, fresh lemon juice, and lemon zest. Season with salt and pepper to taste, making sure the flavors balance harmoniously.

Serve: Carefully transfer the garlic butter green bean almondine to a serving platter. Garnish with freshly chopped parsley for a pop of color and freshness. Serve warm and enjoy!
