Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 cups fresh spinach, chopped

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust according to your spice preference)

Salt and black pepper to taste

8 slices of sourdough or whole grain bread

1 tablespoon fresh lemon juice

Fresh basil or parsley for garnish (optional)

Grated Parmesan cheese (optional, for serving)

Instructions

Prepare the Chickpeas: In a medium skillet over medium heat, melt 2 tablespoons of the butter. Add the minced garlic and sauté for about 1 minute, stirring frequently, until the garlic is fragrant and golden but not burnt.

Add the Chickpeas: Stir in the drained chickpeas, dried oregano, red pepper flakes, salt, and black pepper. Cook the mixture for about 5-7 minutes, mashing some of the chickpeas with the back of a spoon to create a blend of creamy and whole chickpeas. Stir in the fresh lemon juice and remove the skillet from heat.

Sauté the Spinach: In a separate pan, melt the remaining 2 tablespoons of butter over medium heat. Add the chopped spinach along with a pinch of salt. Cook, stirring frequently, until the spinach is wilted, about 2-3 minutes.

Combine Chickpeas and Spinach: Gently fold the sautéed spinach into the chickpea mixture, ensuring everything is well combined. Taste and adjust seasoning if needed.

Toast the Bread: While the chickpea-spinach mixture cooks, preheat your oven’s broiler. Arrange the slices of bread on a baking sheet and place them under the broiler for about 1-2 minutes per side, or until the bread is golden brown and crispy.

Assemble the Toasts: Once the bread is toasted, spoon a generous amount of the garlic butter chickpea and spinach mixture onto each slice.

Garnish and Serve: If desired, top the toasts with freshly chopped basil or parsley. For those who love cheese, finish with a sprinkle of grated Parmesan. Serve immediately to enjoy the toast while it's warm and crispy.

Optional Presentation Tips: Arrange the toasts on a wooden or slate board for a rustic touch. You can also drizzle a little extra olive oil over the top for a finishing touch before serving.
