Ingredients

4 thick slices of sourdough bread

4 tablespoons unsalted butter, softened at room temperature

2 cloves garlic, finely minced

1 teaspoon dried parsley (or 1 tablespoon fresh parsley, finely chopped)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Salt and freshly ground black pepper, to taste

Optional: a pinch of red pepper flakes for an extra kick

Instructions

Prepare the Garlic Butter: In a small mixing bowl, combine the softened butter with the minced garlic, dried parsley, a sprinkle of salt, freshly ground black pepper, and red pepper flakes (if using). Mix thoroughly until all ingredients are well incorporated, and set the bowl aside.

Assemble the Sandwich: Take two slices of sourdough bread and generously spread the garlic butter mixture on one side of each slice. On the unbuttered side of one slice, evenly layer half of the shredded cheddar cheese followed by half of the shredded mozzarella cheese. Place the second slice of bread on top, with the buttered side facing up, to form a sandwich. Repeat the process with the remaining two slices of bread and the rest of the cheese to create a second sandwich.

Heat the Pan: Preheat a non-stick skillet or griddle over medium-low heat. Allow the pan to get warm, ensuring it reaches a gentle heat that toasts the bread perfectly without burning.

Cook the Sandwich: Carefully place the first sandwich in the heated skillet and cook for approximately 3-4 minutes, or until the bottom is golden brown and the cheese starts to melt. Gently flip the sandwich using a spatula and cook the opposite side for an additional 3-4 minutes, or until it's golden brown and has a delightful crispness.

Melt the Cheese: If the cheese hasn’t melted completely after flipping, cover the skillet with a lid for about a minute. This will trap the heat and ensure your cheese becomes deliciously gooey.

Slice and Serve: Once cooked, remove the grilled cheese sandwich from the skillet and allow it to rest on a cutting board for a minute. Slice it diagonally into two halves and serve warm. For an extra touch, pair with a side of marinara sauce for dipping, if desired.

Prep Time: 10 minutes | Total Time: 20 minutes | Servings: 2 sandwiches

                - Presentation Tips: Serve the sandwich on a cutting board or a plate, garnished with a sprig of fresh parsley for an inviting look. Add a small bowl of marinara sauce on the side for a pop of color. Enjoy the crispy, melty goodness!
