Ingredients

2 cups Greek yogurt (plain or flavored)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1 ½ cups granola or crushed graham crackers

1 cup fresh fruit (sliced strawberries, bananas, or blueberries)

1 cup mini chocolate chips or dark chocolate shavings (optional)

12 large cookies (store-bought or homemade, preferably chocolate chip or oatmeal)

Instructions

Prepare the Yogurt Mixture: In a medium mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Use a spatula or whisk to stir the mixture until it is fully blended and smooth, ensuring that the sweetener and vanilla are evenly incorporated.

Mix In Add-Ins: Gently fold in your choice of fresh fruit along with any desired mini chocolate chips or dark chocolate shavings. Be careful not to mash the fruit as you mix; you want to keep them intact for a delightful burst of flavor in every bite.

Assemble the Sandwiches: Take one large cookie and place a generous spoonful of the yogurt mixture onto the flat side. Use another cookie to create a sandwich by placing it on top of the yogurt, flat side facing down. Press the cookies together gently until the yogurt starts to spread slightly at the edges. Repeat this process with the remaining cookies and yogurt mixture until you have assembled all sandwiches.

Coat the Edges: On a plate, spread the granola or crushed graham crackers. Roll the edges of each yogurt sandwich in the granola or crumbs to create a crunchy texture and an added layer of flavor. Ensure that the edges are well-coated for maximum crunch with every bite.

Freeze: Carefully place the assembled sandwiches onto a parchment-lined baking sheet. Cover the sheet with plastic wrap and freeze for at least 2 hours, or until the yogurt filling is firm and holds its shape well.

Serve Up Your Treats: After the sandwiches are thoroughly frozen, remove them from the freezer and let them sit at room temperature for about 5 minutes for easier handling. If preferred, you can cut them in half for smaller servings and serve immediately!

Storage: For any leftovers, wrap each individual sandwich in parchment paper or place them in an airtight container with parchment paper layers to prevent sticking. Store them back in the freezer for a delicious treat whenever you crave something refreshing.
