Ingredients

For the Brownie Base:

1 cup (120g) all-purpose flour

1/2 cup (50g) unsweetened cocoa powder

1 cup (200g) granulated sugar

1/2 cup (115g) unsalted butter, melted

2 large eggs

1 tsp vanilla extract

1/4 tsp salt

For the Raspberry Yogurt Layer:

2 cups (480ml) plain Greek yogurt (or your favorite flavored yogurt)

1/2 cup (60g) fresh raspberries (plus extra for garnish)

2 tbsp honey or maple syrup (optional, for added sweetness)

1 tsp vanilla extract

For Finishing:

Dark chocolate chips or melted chocolate for drizzling (optional)

Instructions

Prepare the Brownie Base:

    - Begin by preheating your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper, ensuring some paper hangs over the edges for easy removal.

      - In a large mixing bowl, combine the melted butter with the granulated sugar, stirring until the mixture is smooth and glossy. Next, add the eggs one at a time, mixing thoroughly after each addition. Finally, stir in the vanilla extract.

        - In a separate bowl, whisk together the all-purpose flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix the batter.

          - Pour the brownie batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 20-25 minutes. The brownies are done when a toothpick inserted into the center comes out with a few moist crumbs. Once baked, allow them to cool completely in the pan.

            Prepare the Raspberry Yogurt Layer:

              - In a medium-sized bowl, gently mash the fresh raspberries with a fork to release their juices. Stir in the Greek yogurt, honey (if desired), and vanilla extract, mixing until well incorporated but still slightly chunky, retaining some raspberry pieces.

                Assemble the Discs:

                  - After the brownies have cooled completely, lift them from the pan using the overhanging parchment paper. Use a round cookie cutter or a glass to cut the brownies into circular discs.

                    - Arrange half of the brownie discs on a serving platter or baking sheet. Take a generous spoonful of the raspberry yogurt mixture and spread it evenly over each brownie disc. Place a second brownie disc on top to create a “sandwich.” If there's any leftover yogurt, feel free to dollop it on top for a decorative touch.

                      Freeze:

                        - Place the assembled brownie discs in the freezer and let them chill for at least 2-3 hours or until they are frozen solid.

                          Serve:

                            - Before serving, melt some dark chocolate and drizzle it over the frozen brownie discs if you like a chocolatey finish. Garnish with additional fresh raspberries and enjoy your delicious Frozen Yogurt Raspberry Brownie Discs!

Prep Time: 15 minutes | Total Time: 3 hours 30 minutes | Servings: 12 discs

                                - Presentation Tips: Arrange the discs on a decorative platter, and consider adding mint leaves for a pop of color alongside the raspberries.
