2 cups fresh raspberries (frozen raspberries can be used if fresh are unavailable)

2 tablespoons honey or maple syrup (adjust quantity based on the sweetness of raspberries)

1 ½ cups plain Greek yogurt (or your preferred flavored yogurt)

½ cup heavy cream (substitute with coconut cream for a dairy-free version)

1 teaspoon vanilla extract

Pinch of salt

¼ cup granola or crushed nuts (optional, for crunchy texture)

Fresh mint leaves (optional, for garnish)

Instructions
 

Prepare the Raspberries: In a medium bowl, use a fork to gently mash the fresh raspberries until they release their juices. Add the honey or maple syrup to the bowl and stir until completely combined. Set aside and let the mixture sit for a few minutes to enhance the flavors.

    Create the Yogurt Base: In another mixing bowl, combine the Greek yogurt, heavy cream, vanilla extract, and a pinch of salt. Use a whisk to blend the ingredients thoroughly until the mixture is smooth and creamy.

      Layer the Mixtures: Line a 9x5 inch loaf pan with parchment paper, ensuring there is some overhang to assist with easy removal later. Pour half of the yogurt mixture into the base of the prepared pan and carefully spread it into an even layer.

        Spoon on the Raspberry Layer: Evenly distribute the mashed raspberry mixture over the yogurt layer, taking care to leave some chunks of raspberries for added texture and bursts of flavor.
