Ingredients

For the Oatmeal Cookies:

1 cup rolled oats

1/2 cup whole wheat flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 cup coconut oil, melted

1/2 cup packed brown sugar

1/4 cup honey or maple syrup

1 large egg

1 teaspoon vanilla extract

1/2 cup chocolate chips (optional)

For the Frozen Yogurt Filling:

2 cups plain Greek yogurt

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/2 cup fruit of your choice (e.g., strawberries, blueberries, mashed bananas)

Instructions

Preheat the Oven:

Begin by preheating your oven to 350°F (175°C). Place a sheet of parchment paper on a baking sheet to prevent sticking.

      Prepare the Oatmeal Cookie Dough:

In a large mixing bowl, blend together the rolled oats, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon. In a separate bowl, whisk the melted coconut oil, packed brown sugar, honey or maple syrup, egg, and vanilla extract until fully combined and smooth. Gradually incorporate the wet mixture into the dry ingredients, mixing until just combined. If desired, gently fold in the chocolate chips.

          Shape the Cookies:

Using a tablespoon, scoop out portions of the dough and place them onto the prepared baking sheet, ensuring they are spaced about 2 inches apart. Lightly flatten each dough ball to form uniform cookies.

              Bake the Cookies:

Bake the cookies in the preheated oven for approximately 10-12 minutes or until the edges turn golden brown. Once baked, remove them from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                  Make the Frozen Yogurt Filling:

In a mixing bowl, combine the plain Greek yogurt, honey or maple syrup, and vanilla extract. Stir in your chosen fruit until everything is well mixed and evenly distributed.

                      Assemble the Sandwich Bites:

After the oatmeal cookies have cooled completely, take one cookie and spread about 1 tablespoon of the yogurt filling on the flat side. Place another cookie on top, flat side down, to create a sandwich. Continue this process with the remaining cookies and yogurt mixture.

                          Freeze the Sandwich Bites:

Arrange the assembled sandwich bites on the baking sheet and place them in the freezer for at least 2 hours or until they are firm.

                              Serve:

Once frozen, you can enjoy these delicious sandwich bites right out of the freezer. Alternatively, let them sit for a minute at room temperature for a slightly softer texture before devouring!
