Frozen Yogurt Mocha Coffee Clusters

2 cups plain Greek yogurt

1 cup brewed espresso or strong coffee, cooled

1/4 cup unsweetened cocoa powder

1/2 cup honey or maple syrup (to taste)

1 teaspoon pure vanilla extract

1/4 teaspoon sea salt

1/2 cup dark chocolate chips

1/4 cup crushed nuts (such as walnuts or almonds)

1/2 cup mini chocolate-covered espresso beans (optional)

Instructions
 

Blend the Base: In a large mixing bowl, whisk together the Greek yogurt, cooled espresso (or coffee), cocoa powder, honey (or maple syrup), vanilla extract, and sea salt. Continue mixing until the mixture is completely smooth and well combined, with no lumps remaining. Taste the base and adjust the sweetness by adding more honey or maple syrup if desired.

    Add Mix-Ins: Using a spatula, gently fold in the dark chocolate chips and crushed nuts until they are evenly distributed throughout the yogurt mixture. If you like an extra coffee flavor, fold in the mini chocolate-covered espresso beans at this stage.

      Prepare the Clusters: Line a baking sheet or tray with parchment paper. Using a tablespoon or a small ice cream scoop, portion out spoonfuls of the mixture and place them onto the lined sheet. Lightly flatten each scoop with the back of the spoon to form bite-sized clusters.

        Freeze: Carefully place the tray in the freezer and allow the clusters to freeze for at least 4-6 hours or until they are completely solid.

          Store: Once the clusters are frozen, transfer them to an airtight container. If stacking layers, place parchment paper between the clusters to prevent sticking. Store in the freezer for up to 2 months.
