Ingredients

For the Cookie Dough Layer:

1 cup almond flour

1/4 cup coconut flour

1/4 cup maple syrup

1/4 cup creamy almond butter or peanut butter

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/3 cup dark chocolate chips

For the Matcha Yogurt Layer:

2 cups plain Greek yogurt (or dairy-free yogurt)

1/4 cup honey or agave syrup (adjust to your preferred sweetness)

2 tablespoons matcha powder

1 teaspoon vanilla extract

A pinch of sea salt

For Topping:

2 tablespoons white chocolate chips (optional)

Extra matcha powder for a decorative dusting

Instructions

Prepare the Cookie Dough Layer:

In a mixing bowl, combine the almond flour, coconut flour, maple syrup, almond butter, vanilla extract, and sea salt. Stir the ingredients together until a thick, cohesive dough forms. Gently fold in the dark chocolate chips until evenly distributed.

      Line a Baking Dish:

Take an 8x8 inch (20x20 cm) square baking dish and line it with parchment paper, making sure to leave some overhang on the sides. This overhang will help you lift the bars out later.

          Press the Cookie Dough:

Firmly press the cookie dough mixture into the bottom of the lined baking dish. Use your fingers or the back of a spoon to create a smooth and even layer. Once pressed down, place the dish in the freezer while you prepare the yogurt layer.

              Prepare the Matcha Yogurt Layer:

In a large mixing bowl, whisk together the Greek yogurt, honey (or agave syrup), matcha powder, vanilla extract, and a pinch of sea salt. Mix until the mixture is smooth and all the ingredients are fully combined.

                  Assemble the Bars:

Remove the baking dish from the freezer. Carefully pour the matcha yogurt mixture over the chilled cookie dough layer. Use a spatula to spread it evenly to the edges of the dish.

                      Add Toppings:

If desired, sprinkle the white chocolate chips evenly on top of the matcha yogurt layer. For a finishing touch, dust lightly with extra matcha powder for decoration.

                          Freeze:

Cover the baking dish with plastic wrap or aluminum foil, then transfer it to the freezer. Allow the bars to freeze for at least 3-4 hours or until they are completely set.

                              Slice and Serve:

Once fully frozen, lift the bars out of the baking dish using the parchment overhang. Place them on a cutting board and cut into squares or rectangles. For easier cutting, allow them to sit at room temperature for a few minutes before serving.

                                  Store:

Any leftover bars can be stored in an airtight container in the freezer for up to 2 weeks, ensuring you always have a delicious treat on hand.

Prep Time, Total Time, Servings: 25 min | 4-4.5 hours | 12 bars

Presentation Tips: Serve the bars on a cool platter, garnished with fresh mint leaves or additional matcha powder for an eye-catching presentation. Enjoy!
